I would love for PJ to do a remake of some of the classic fantasy films. Given his great WETA shop and such. I would pick The Wizard of Oz. I'd love to see him do a more dramatic interpretation

Peter Jackson is a director of amazing vision, I thnk he could just about do anything he put his mind to!
All of these films are classics of the fantasy genre... but I think the 1939 version of The Wizard of Oz is perhaps too ingrained in our collective pop-culture consciousness for there to be any need to update it. Judy Garland IS Dorothy, the same way Elijah Wood IS Frodo IMHO.
I voted for "Labyrinth" because although I'm personally a huge fan of the original film (starring Jennifer Connelly and David Bowie)... I don't think it's massively well-known among today's younger audience, and I think it could be redone to great effect by PJ and his team. 
If I had to pick another fantasy movie (besides The Hobbit of course) it'd probably be "The Never-Ending Story"... Also, imagine what PJ could've done with Harry Potter.

I chose other, even though it is very recent, he should remake the lion, the witch and the wardrobe, get a better white witch, the rest of the cast were fine. Keep in NZ of course. I would love to see PJs take on the film.

^ REALLY Liz? I don't know, the Narnia movies aren't my fave fantasy films by a long shot, but IMHO Tilda Swinton was fantastic as the White Witch.

What a great idea for a poll! I voted for the Dark Chrystal. I loved that story as a kid and I think if Peter Jackson re-did it it would be so much edgier and intense. I would love to see what he'd do with it.
