He'd still be him, not matter what colour his eyes were (and we'd all still love him, not matter what!)
If he didn't have blue eyes, then I'd think that BRIGHT green eyes could be gorgeous. Or maybe even dark green...mmmm... 
I think he'd also look just as handsome with brown eyes - I have very deep brown eyes (almost black, as some people tell me), and people have always told me they're full of expression, and they can see into my sooooul (which is slightly weird, but y'know). Elijah with my eye colour would either be absolutely LUSH, or just weird.
But blue is the best colour for him. End of.
